Chilled Summer TeasChilled Chai
1 Cup Water First boil the water. Then, add all of the spices, the tea, and the milk. Return to a boil and strain. For chilled tea, put into the refrigerator or freezer till cold, but do not keep it for more than an hour (this recipe works for hot chai as well, of course). Chai is MUCH better when fresh. Enjoy!
1/2 cup Peppermint Mix the herbs together well. Use approximately 1/3 cup of herbs to brew 1 gallon of tea. Chill and serve over ice. Garnish with fresh sprigs of mint.
1/2 cup Spearmint This refreshing tea was named by my 4 year old. He loved the tea so much and each day would ask me to make him more "yesterday tea". Mix the herbs together well. Use approximately 1/3 cup of herbs to brew 1 gallon of tea. Chill and serve over ice. Garnish with fresh sprigs of lemon balm or mint. Sun Tea - When brewing summer teas to be served chilled we prefer to prepare sun tea. To prepare place your herbs in a teaball or muslin bag in a glass jar. Cover with cool water, cover the jar and place in a sunny spot outside. We usually leave our tea out to brew about 6-8 hours. For best results brew herbal teas with distilled or filtered water.
